5-Minute Bone Broth Noodle Soup

This is a great weekday recipe. It's hearty, healthy, and loaded with flavor and texture. All you need is 5 minutes and 4 ingredients!

We’re definitely getting into soup season around here, and I’m here for it! I love taking hours in the fall and winter months to develop a delicious and hearty soup, but like most people, I just don’t always have the kind of time, and I also don’t have the bandwidth in my day to dirty tons of equipment and pots. Other times, I really just want a super simple cup of soup, which can still be just as aromatic and flavorful as one that took hours to create. Enter this 5-Minute Bone Broth Noodle Soup!


This recipe is perfect when you’re looking for a warm, comforting serving of soup during the remote work day or to prep ahead for the office, when you want to prepare a simple weeknight meal, or even as a recharging and satisfying post-workout meal. It’s healthy and nourishing, requires just a few ingredients, takes literally 5 minutes to prepare, and it’s loaded with flavor and texture. I make it a lot during the week, and you should definitely try it out!

A Quick Note on Ingredients and Substitutions:


I always keep bone broth powder, nutritional yeast, and tofu noodles in the house. These are three ingredients that I absolutely love because you can create beautiful flavors with each in a million different ways. They’re also healthy, which allows me the space to remain very creative, while maintaining a focus on wellness when it comes to developing recipes and feeding my family. I use these ingredients a lot in my recipes and cooking, so if you’re following along here, make sure you have them on hand! They’re so fun. However, if you want to make this recipe and don’t have some of the ingredients listed above, or if you want to make small changes for your palate and preferences, here are some ideas:


Nutritional Yeast ➡ finely grated Parmesan or cheddar cheese

Bone Broth Powder ➡ Pre-made bone broth or chicken, beef, or vegetable stock or broth

Scallions ➡ fresh herbs like cilantro and parsley, or chopped onion or shallots

Tofu noodles ➡ Any noodles that bring you joy!

Prep Time: 5 Minutes

Cook Time: 5 Minutes

Servings: 1 Bowl or Mug of Soup


Instructions

10 ounces boiling water in a soup bowl or mug

1 scoop bone broth powder

*You can totes sub by bringing 10 ounces prepared bone broth to a boil

1 ½ tablespoons nutritional yeast

½ cup chopped scallions

1 8-ounce bag tofu noodles, thoroughly rinsed in a strainer with warm water

Flaky salt to taste

Chili flakes (optional if you want heat)


Directions

  1. Add the bone broth powder and nutritional yeast to the mug. Stir vigorously until combined. Add the remaining ingredients and stir to combine, seasoning with salt to taste.

  2. Top with optional chili flakes.
