Brioche Toast with Brie, Pear, and Caramelized Onion

This sweet and savory dish is elegance made easy.

One of my fav flavor combos ever is brie, pears, and sweet onions. I love bringing these together in as many ways as possible! On a sandwich, a pizza, or as a gorgeous open-faced toast like this. Golden pillowy brioche is the perfect vehicle for bringing these sweet and savory flavors together as a perfect snack for anything from brunching and lunching at home, to elegant and sophisticated dinner party spreads. This is ideal for slicing into stylish smaller portions for serving around the room, as well. It’s simple to create and an absolutely beautiful dish to bring to any table.

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 4 Slices


Ingredients

1 medium Vidalia onion, thinly sliced

1 tablespoon unsalted butter

A pinch of salt for seasoning

4 slices brioche bread

½ pound Brie, sliced into long thin wedges

2 ripe pears, sliced into ½-inch thick wedges (I prefer Bosc for this recipe)

Honey for topping (optional)

Flaky salt for topping (optional)


Directions

Preheat the oven to 325 degrees F.

  1. Caramelize the onions: Drop unsalted butter in a large non-stick skillet over medium heat until melted and sizzling. Add onion and stir until translucent, about 2 minutes, and season with a pinch of salt. Reduce to medium-low heat and stir onions every few minutes to avoid burning, until golden, 15-20 minutes. Remove from heat and place aside.

  2. Place brioche slices in the oven on a sheet pan until lightly toasted, about 10 minutes, flipping halfway through. The bread should be lightly toasted.

  3. Place a layer of slice brie, top with 2-3 pear slices, and then 1-2 tablespoons of the caramelized onions. Return pan to oven for 10 minutes, until cheese is glistening and beginning to melt.

  4. Remove from oven and top each slice of toast with a drizzle of honey and flaky salt. Serve warm.
