No Bake Chocolate Fudge Pudding Pie

This dessert is elegance made easy. Rich, velvety dark chocolate meets sticky, nutty crust. It's also vegan and gluten/dairy free!

Two things I love...need...cherish: dessert and creating simply nutritious and delicious recipes. Two things I do not enjoy so much: dessert or refined sugar hangovers and a huge mess to clean up in the kitchen. If you can relate, then this No Bake Chocolate Fudge Pudding Pie is a very sweet dream!


This avo-banana pudding sets overnight and becomes a thick, luscious fudgy filling over a chewy, gooey date crust. It’s vegan and dairy/gluten free, absolutely delicious, and easy to make and clean up after. It’s basically the perfect dessert for anyone and everyone!


From its simplicity (all you need is a blender or food processor and a pie dish!), to the beautiful flavor and texture combos, to the natural, healthy, whole ingredients, it’s become one of my favorite “anytime” desserts to keep in the fridge for the fam. Chocolate lovers, you’ll really enjoy this one!

Prep Time: 1 hour

Cook Time: Overnight Chill

Yield: 8 Servings


Ingredients

For the Crust:

2 1/4 cup chopped raw pecans

1 ½ teaspoons cinnamon

2 dozen medjool dates, soaked for two minutes and pitted

½ cup shredded coconut

3 tablespoons organic coconut oil, melted


For the Chocolate Fudge Pudding Filling:

1 ¾ cups unsweetened cacao powder

2 tablespoons maple syrup

3 large ripe avocados

2 ripe bananas

½ cup water

10 Stevia drops

½ cup coconut sugar

Directions

For the Crust:

1. Add pecans, cinnamon, dates, shredded coconut, and coconut oil to blender.

2. Pulse to combine and then blend ingredients on medium speed until mixture turns into a sticky ball of dough.

3. Transfer to a 9” pie dish and press to form your pie crust.

4. Place in fridge to harden while you prep your filling.


For the Chocolate Fudge Pudding Filling:

1. Add cacao powder, maple syrup, and coconut sugar to blender.

2. Cut avocados in half, remove pits, and scoop flesh out into blender.

3. Add peeled bananas to blender.

4. In a separate bowl, stir water and stevia drops. Once mixed, add to blender.

5. Blend all ingredients on medium speed until creamy and smooth. Scrape the sides of the blender with a spatula as necessary.

6. Pour the filling into your pie crust and allow pie to set overnight, or for at least 6 hours.
