Not only are these potatoes vibrant and beautiful. They're also rich, flavorful, and so fun for the whole fam to eat!
Time for a MAJOR parenting hack! Purple potatoes might just be the trick for getting your littles into more vegetables! I made these Magical Mashed Potatoes over the weekend and Cecily has been eating them with her dinner again and again because she's SO excited about our mashed potatoes magically turning purple. She thinks it's so cool! Hey, whatever works, right? I think it's pretty cool, too...
All I did was peel and boil them, mash them up with a fork, add in some butter, milk, S+P, and serve them alongside a roast chicken and kale sautéed with garlic and oil. Cook Time: 25-30 Minutes
Yield: Serves 4-6
Ingredients
1 pound purple potatoes, peeled
2 tablespoons butter (more or less if you prefer)
1/4 cup oat or unsweetened almond milk
Kosher salt to taste
Freshly ground black pepper to taste
Directions
Bring a pot of salted water to a rolling boil. Boil the potatoes until they are soft enough to be pierced with a fork.
Strain the potatoes and add them to a bowl. Add the butter, milk, salt and pepper, and then mash the potatoes with a fork until they reach your preferred texture. Top with more butter if desired. Serve warm-hot. Store in the fridge in an airtight container for up to five days.
