IYKYK: there’s something so awesome about that feeling of waking up and feeling the energy of Sunday football before the games even begin. It’s enough to drown out those Sunday scaries until at least 4pm.
I think anyone would agree that football looks and feels VERY different this year. Between the missing energy of fans in the stands and the fact that football has been on pretty much every single day (hubs is in his glory and I’m thankful for Netflix on my laptop), only increasing this feeling that the days have kind of melted together at this point, the vibe is just sort of strange.
What I miss most is the absence of the culture that surrounds that Sunday energy -- those Sunday football get-togethers with friends and family, heading to a local spot here in Hoboken to watch a game, surrounded shoulder-to-shoulder by the screaming of passionate fans, or just walking around town and seeing big groups of people heading out in their jerseys for some classic Sunday debauchery.
This all reigns extra true for Super Bowl Sunday. It’s only the MOST festive and intense football Sunday of the year -- the party plans, the anticipation of an epic halftime show, the fun group energy, lots of laughs, cold drinks, and the delicious snacks and finger foods.
We may not all be asking the big “What are your Super Bowl plans?!” question this year, but it doesn’t mean we need to give up on surrounding ourselves with all the fun perks that come with the day! That’s where these Game Day Turkey and Goat Cheese Mini Meatballs come in. This is a super quick and easy one bowl recipe loaded with so much flavor and lots of different textures, and the perfect finger food to enjoy this year. Maybe next year we can all rally together to change it to Super Bowl Saturday, instead? We could all use a day in between, amiright?
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 2 dozen mini meatballs (yay for SS leftovers!)
Ingredients
1 lb ground turkey meat
1 egg
1 teaspoon olive oil
½ cup almond flour
⅔ cup crumbled goat cheese
1 tablespoon Everything But the Bagel Seasoning, plus more for topping (my fav is TJ brand, but there are lots of different brands out there now and I’ve seen some on Amazon)
½ teaspoon garlic powder
¼ cup chopped fresh parsley
1 tablespoon chopped fresh basil
1 tablespoon salt
1 teaspoon ground black pepper
Directions
Preheat oven to 325°
Add all ingredients to a bowl and mash together until combined (use clean hands, a potato masher, or a large fork).
Line a sheet pan with parchment paper or foiled sprayed with cooking spray.
Use a mini ice cream scooper or a teaspoon to form mini, bite sized meatballs. Drop about an inch apart on the sheet pan and then roll into balls.
Sprinkle more EBTB seasoning over the meatballs before baking.
Bake for 18-20 minutes.
*Keep it sanitary, safe, and cute by serving with individual toothpicks inserted into each. Extra points for themed toothpicks!
