Vanilla Almond Milk

This 3-ingredient vanilla almond milk will have you ditching the store bought versions once and for all.


Vanilla Almond Milk

Now that I've discovered the simplicity and sheer deliciousness of making my own batch of almond milk right at home, there's no going back. Not to toot my own horn here, but this is the best almond milk I've ever had. The best part is, it requires only three ingredients: almonds, dates, and vanilla paste or extract. You'll also need a blender, nut milk bag, and a glass bottle or two (plastic is fine, but glass keeps it super chilled and is just more aesthetically pleasing). Vanilla Almond Milk

Prep Time: Overnight Soak / 10 Minutes

Yield: About 1 1/2 Quarts


Vanilla Almond Milk Ingredients

2 cups raw almonds

3 pitted Medjool dates (4 for a slightly sweeter milk)

2 teaspoons vanilla paste or extract

7 cups filtered water


Also Need:

Blender

Nut milk bag

2 quart sized glass bottles for storage


Directions

  1. Place almonds in a bowl. Cover completely with water. Soak overnight in refrigerator.

  2. Strain soaked almonds. Add almonds, dates, vanilla paste or extract, and 7 cups filtered water to a blender. Blend on medium-high speed until creamy, about 2 minutes.

  3. Pour milk into nut bag. Squeeze to strain over a large clean bowl. Discard strained almond remains OR save it for baking (how-to for this coming soon). Transfer almond milk to glass bottles. Store in refrigerator up to 5 days. Shake before use.
